Our Story
A Small Farm with a Big Commitment.
Prairie Table Mushrooms was built on the belief that the best food comes from people who care deeply about what they grow — and who they grow it for.
The Beginning
How Prairie Table Began
Prairie Table Mushrooms started the way most good things do — with a genuine love for food and a question: why is it so hard to find truly fresh, locally grown gourmet mushrooms in Nebraska? We set out to answer that question by building a farm right here in Lincoln.
From the beginning, our focus has been on quality over quantity. We grow a small selection of varieties — Shiitake, Blue Oyster, Grey Oyster, and Lion's Mane — and we grow them exceptionally well. Every harvest is timed for peak freshness, and every delivery is made with the care of people who take pride in what they produce.
Today, we supply restaurants and chefs across Lincoln and Omaha who share our belief that where food comes from matters. We're proud to be part of the growing local food economy in eastern Nebraska.
What Drives Us
Our Mission
"To grow the finest gourmet mushrooms in Nebraska and deliver them directly to the chefs and kitchens that will make the most of them — building a stronger, more connected local food system one harvest at a time."
Quality First
We grow fewer varieties and grow them better. Every mushroom that leaves our farm meets the standard we'd want on our own table.
Rooted Locally
We're a Nebraska farm serving Nebraska kitchens. Keeping food local means fresher product, stronger communities, and a smaller footprint.
Honest Relationships
We work directly with chefs — no brokers, no middlemen. That means better communication, more flexibility, and a real partnership.
Sustainable Growing
How We Grow
Sustainable practices aren't a marketing claim for us — they're just how we farm.
Controlled Environment Growing
Our mushrooms grow in carefully managed indoor environments, allowing us to produce year-round without the unpredictability of outdoor conditions.
Minimal Inputs
We use natural substrates and avoid synthetic chemicals. Our growing process is clean, simple, and close to how mushrooms grow in nature.
Low Water Use
Mushroom cultivation uses a fraction of the water required by most crops — making it one of the most resource-efficient ways to grow protein-rich food.
Zero Food Miles (Almost)
Delivering locally means our mushrooms travel minutes, not days. Less transit time means fresher product and a dramatically lower carbon footprint.
Nebraska Local Food
Nebraska Grown. Nebraska Served.
We believe in the Nebraska local food economy — not as a trend, but as a genuine commitment to the communities we live and work in. When chefs source from local farms, money stays in the region, relationships deepen, and the food on the plate tells a real story. We're proud to be part of that story.
